Marsanne noble 2000
In the spirit of sweet wines from the South: volume, balance and dried fruit aromas Cascades of Mediterranean fruits and spices: dried figs and apricots, cinnamon and rhubarb. The shrunken grapes are picked by hand in November. There is no need to selectively harvest in this vineyard, every grape is collected. The grapes are then pressed slowly to extract every drop of goodness gently. Once the fine particles have settled, the juice is fermented in two-year-old barrels. Fermentation takes place during the warm period of the year and the wine rests when it is cooler. The wine languishes at its own pace for two to four years, ten years for the vintage 2000! The wine itself is master in creating its own balance. We let it run its course. It is then brought to a light filtration by gravity and bottled without sulfites. (Bottling : June 2011).
Acidity rounds out the balance and the light rancio effect is the cultural signature of our regional sweet wines!
