We are drawn to observe the interactions between the plant and its environment. As we have never left the natural environment, the necessity of getting the wines certified was obvious and easy.
There can be no doubt about the huge advantages brought by the organic agriculture for the health!
The biologic activity within the soil is coming back to life, the fruit is more resistant, the plant is protecting itself more effectively now that it controls fully its immunity. As a consequence it suffers much less from hydric stress, the exchange between the soil and the roots is more active, the deeper soil layers are being reconstructed, the balance of acidity is back and the physiologic maturity is reached naturally. The maturity is the moment when we consider the grape tastes ripe, with no crudity even when biting the berry to the peeps. At this stage the grape feels supple yet firm, it the right moment for picking! As a result, the wines' profile has changed, they put on one degree of acidity and lost one degree of alcohol: they are more elegant, finer; the fruit flavors are sharper. The conditions are now brought together to obtain a genuine expression of the land, the terroir!
