AOC Minervois (red wine)
Syrah, Grenache and Carignan: the classic trilogy with only the proportions varying from vintage to vintage. The grapes are gently destemmed to avoid crushing. The juice used for this wine, a majority of which is imprisoned in whole grapes is only released when pressed. The pressed juice is used in this blend, the juice present in the vat before pressing it is separated and added to the traditional Minervois.
These wines, with their ample structure, will have no difficulty holding their own in the company of barrels. After spending about a year (we believe they need at least that long to get to know each other) the end result maintains its ripe fruit, a fi ne texture and civilized tannins.
This wine can present its good breeding in the company of lovingly crafted dishes full of character. Ah! ...beef slowly stewed in wine!.. Ah... succulent game hen! Ah! hare in aromatic sauce!
