CABERNET-SAUVIGNON
Clayish calcareous soils with small rocks and a cool area
aid in supporting this variety to express its full personality.
Harvesting occurs on the verge of over maturity and vinification is done traditionnally.
During the fermentation (28°C) we do two pumping overs.
Maceration lasts for thirty days.
Vat ageing follows for a period of approximately four months.
The aromatic range is fruity and underlined by a dense and long tannic structure.
The combination of the soils and vinification reveal the best of our Cabernet-Sauvignon.
The ageing potential is from five to six years.
The enigma of this wine is slowly coming to light as the LTB (La Tour Boisée)
Cabernet-sauvignon is a new wine in our range and is our wine makers authentic adventure.
The perfect match could be a lamb served with preserved figs,
or even the classical French meal of a drop of melted blue vein cheese
on a grilled steak served with a fresh salad.
