Syrah, Grenache and Carignan (one third of each).
The proportions of this blend may change from one year to the other.
Our old Grenache and Carignan give us the treasures
of the last 80 year cycle of climatic conditions. Hence their life experiences.
The grapes are carefully handpicked not to break the skin and to conceal the juices,
as depending on the vintage (the climatic conditions) we allow the fermentation
of this wine to begin within the grape.
The pressing is done lightly to extract the complex and rich juices,
without extracting excess juice from the skin.
The structure of these wines are therefore appropriate for the oak barrel.
After one year in contact with the wood barrel the wine has kept its fruit
and obtained a wonderful texture with civilised tannins !
We believe that one year is a minimum a wine should be aged in a barrel.
It reveals its delicacy together with an elaborate cuisine
of tasty red meats, stews and exotic (spicy) dishes!
