Domaine de Subremont white VIN DE PAYS DES CÔTEAUX DE PEYRIAC WHITE This Vin de Pays is a pure Sauvignon. It is a blend of two soil types: The fresh clayish and silty soils of Gibalaux brings the fruit. The warmer calcareous soils of the lower hills of Laure Minervois brings the body. Pressing is carefully done. Harvest is vinified at low temperatures (14 to 18 °C) in order to preserve all the fruit. The ageing on fine lees gives the soft and round body. It gives a beautiful light over the Sauvignon variety. We aim to extract the most natural expression for all our Vins de Pays wines.
