VIN DE PAYS D'OC RED
MERLOT Once you see the grapes, you can understand why our merlot with its intense deep ruby colour is such a beautiful wine. Despite that the origins of the Merlot plant are not from the Minervois, (hence the "vin de pays" tag) this wine offers a typical Mediterranean flavour, aiming at a red plum and black cherry. In the mouth one may enjoy its structure and aromatic power. Its red fruits, perfumed with thyme, reflect the strong surrounding bush lands. The final taste is on the fresh fruit with empyreumatic notes. Its clayish calcareous soil provides a limited and regular water supply. The small size of the grapes save the fruit and power of the wine against the risks of dilution from a large rainfall. Its vinification is the same as for all our red wines and vatting time is between 20 and 25 days. It is a Merlot from our land !
