In honor of the local blending tradition of Languedoc, here is a selection within the large choice of white AOC Minervois grape varieties: Marsanne, Vermentino, Roussanne, Grenache blanc, Maccabeu, Muscat. As for the proportions of the blend, they are in the hand of nature!

Wine description


Vinification The grapes were hand-picked together, destemmed and pressed as they entered the cellar. After pressing, the juices were kept at a cool temperature, for one week, until the different varieties were entirely picked. Pressing all the grape varieties together at low temperature helps preventing oxydation and allows a slow and smooth start of the alcoholic fermentation. The finesse and fruit aromas result from a careful temperature control, the early blending and the long fermentations followed by the sur-lee ageing until bottling.

Soils Many terroirs are involved showing different proportions of clay, sandstone and limestone depending on their location. Some are looking South, others are higher hills to the West where varieties are mixed and make the most of cooler temperatures for a progressive ripening.

Food pairing Its delicate flavor is well paired with grilled fish, a seabass with fennel or salt crusted trout. This complex blend, with its Mediterranean flair, is a natural choice as an aperitif.

Characteristics Golden with various aromas of spring flowers and ripe fruits (pinapple, peach, mango) on the nose. As it opens, notes of dried apricots and exotic fruits develop on the palate.
